Lemon Bars
Ingredients
Curd:
- 1/2 C. Butter + more for glaze
- 1 C. + 2 Tbsp. Flour – divided
- 1/4 C. Powdered Sugar + more for glaze
- 1/2 tsp. Baking Powder
- 2 large Eggs
- 3 Tbsp. Lemon Juice + more for glaze
- 1 whole Lemon the zest only
Crust:
- 1/2 C. Butter
- 1 C. Flour
- 1/4 C. Powdered Sugar
Instructions
Crust:
- Mix: flour, butter and powdered sugar together with pastry knife. Should be lumpy like pie crust.
- Press into a lined 8×8” pan and bake at 350°F for 15 minutes till light brown. Do not over bake.
Filling:
- Combine the: 1 C. Sugar, 1/2 tsp. Baking Powder, 2 Tbsp. Flour.
- Mix well.
- Add 2 Eggs, Lightly beaten – mix until just blended.
- Add 3 Tbsp. Lemon Juice and zest of 1 Lemon
- Add to mix and pour over Hot crust.
- Bake 20 minutes until edges are light brown. Loosen edges or bars while they’re still warm by running a sharp knife around the edges.
To make Glaze combine:
- Powdered Sugar, Lemon Juice and Butter.
- Mix well, until smooth.
- Drizzle over warm bars.
Notes
Can skip the glaze and top lemon curd bars with powdered sugar.
