Lemon Bars

Ingredients
  

Curd:

  • 1/2 C. Butter + more for glaze
  • 1 C. + 2 Tbsp. Flour – divided
  • 1/4 C. Powdered Sugar + more for glaze
  • 1/2 tsp. Baking Powder
  • 2 large Eggs
  • 3 Tbsp. Lemon Juice + more for glaze
  • 1 whole Lemon the zest only

Crust:

  • 1/2 C. Butter
  • 1 C. Flour
  • 1/4 C. Powdered Sugar

Instructions
 

Crust:

  • Mix: flour, butter and powdered sugar together with pastry knife. Should be lumpy like pie crust.
  • Press into a lined 8×8” pan and bake at 350°F for 15 minutes till light brown. Do not over bake.

Filling:

  • Combine the: 1 C. Sugar, 1/2 tsp. Baking Powder, 2 Tbsp. Flour.
  • Mix well.
  • Add 2 Eggs, Lightly beaten – mix until just blended.
  • Add 3 Tbsp. Lemon Juice and zest of 1 Lemon
  • Add to mix and pour over Hot crust.
  • Bake 20 minutes until edges are light brown. Loosen edges or bars while they’re still warm by running a sharp knife around the edges.

To make Glaze combine:

  • Powdered Sugar, Lemon Juice and Butter.
  • Mix well, until smooth.
  • Drizzle over warm bars.

Notes

Can skip the glaze and top lemon curd bars with powdered sugar.
