Forgotten Minestrone Soup

Ingredients
  

  • 1 lb. Lean Beef Stew Meat
  • 6 C. Water
  • 28 oz. Tomatoes with liquid cut up
  • 1 Cube Beef Bouillon
  • 1 Med. Onion chopped
  • 2 Tbsp. Fresh or Dried Parsley minced
  • 1/2-1 tsp. Granulated Garlic
  • 2 1/2 tsp. Salt optional
  • 1.2 tsp. Pepper
  • 1 Med. Zucchini thinly sliced or chopped
  • 2 C. Cabbage or Spinach finely chopped
  • 16 oz Garbanzo Beans cooked and drained
  • 1 14.5 oz can Green Beans
  • 1 C. Small Pasta such as elbow, macaroni, shells or wheels – uncooked
  • 1/4 C. Parmesan Cheese grated fresh
  • Fresh Basil chopped

Instructions
 

  • In a slow cooker, combine beef, water, tomatoes, bouillon, onion, parsley, garlic, salt (if desired), and pepper.
  • Cover and cook on low for 7-9 hours or until meat is tender.
  • Add zucchini, cabbage, both kinds of beans and pasta and cook on high, covered, 30 minutes more or until vegetables are tender and pasta is cooked.
  • Pass Parmesan cheese and fresh basil to add individually, as desired.
