Forgotten Minestrone Soup
Ingredients
- 1 lb. Lean Beef Stew Meat
- 6 C. Water
- 28 oz. Tomatoes with liquid cut up
- 1 Cube Beef Bouillon
- 1 Med. Onion chopped
- 2 Tbsp. Fresh or Dried Parsley minced
- 1/2-1 tsp. Granulated Garlic
- 2 1/2 tsp. Salt optional
- 1.2 tsp. Pepper
- 1 Med. Zucchini thinly sliced or chopped
- 2 C. Cabbage or Spinach finely chopped
- 16 oz Garbanzo Beans cooked and drained
- 1 14.5 oz can Green Beans
- 1 C. Small Pasta such as elbow, macaroni, shells or wheels – uncooked
- 1/4 C. Parmesan Cheese grated fresh
- Fresh Basil chopped
Instructions
- In a slow cooker, combine beef, water, tomatoes, bouillon, onion, parsley, garlic, salt (if desired), and pepper.
- Cover and cook on low for 7-9 hours or until meat is tender.
- Add zucchini, cabbage, both kinds of beans and pasta and cook on high, covered, 30 minutes more or until vegetables are tender and pasta is cooked.
- Pass Parmesan cheese and fresh basil to add individually, as desired.
