Cream of Spinach Soup – Peter Pan Soup

Ingredients
  

  • 1 Tbsp. Onion – minced
  • 2 Tbsp. Butter
  • 2 Tbsp. Flour
  • 3 C. Evaporated Milk
  • 20 oz Frozen Chopped Spinach
  • 1 tsp. Salt
  • 1 tsp. Chicken Broth Concentrate Paste
  • 1/8 tsp. Nutmeg -freshly grated
  • 1/4 tsp. Granulated Garlic

Instructions
 

  • Saute onion in butter, then blend in the flour and cook 1 minute.
  • Gradually stir in the evaporated milk to make a smooth white sauce.
  • Combine all ingredients and blend with immersion blender till smooth.
  • Heat till hot.

Notes

May also serve with freshly toasted croutons (optional).
