Cream of Spinach Soup – Peter Pan Soup
Ingredients
- 1 Tbsp. Onion – minced
- 2 Tbsp. Butter
- 2 Tbsp. Flour
- 3 C. Evaporated Milk
- 20 oz Frozen Chopped Spinach
- 1 tsp. Salt
- 1 tsp. Chicken Broth Concentrate Paste
- 1/8 tsp. Nutmeg -freshly grated
- 1/4 tsp. Granulated Garlic
Instructions
- Saute onion in butter, then blend in the flour and cook 1 minute.
- Gradually stir in the evaporated milk to make a smooth white sauce.
- Combine all ingredients and blend with immersion blender till smooth.
- Heat till hot.
Notes
May also serve with freshly toasted croutons (optional).
