Taco Salad – Mexican Chef’s Salad

One of my favorite summer meals; makes my mouth water just thinking about it.
Servings 6

Ingredients
  

  • 1 lb. Ground Beef
  • 1 15oz can Kidney Beans drained
  • 1/4 tsp. Salt
  • 1 Onion chopped
  • 4 Tomatoes chopped
  • 1 Head Lettuce shredded
  • 4 oz. Cheddar Cheese shredded
  • 8 oz. French Dressing or 1000 Island Dressing
  • Tortilla Chips plain or taco flavored

Instructions
 

  • Brown beef in a skillet and season with salt then add kidney beans.
  • Cook for about 10 minutes until beef is cooked and beans are tender.
  • In a large bowl, toss, onion, tomatoes, lettuce and cheese together with salad dressing. Add crushed-up tortilla chips.
  • Mix cold salad and hot ground beef together; serve immediately.
