Webster’s Curried Chicken Salad

Ingredients
  

Salad:

  • Grilled Chicken or Veggie Chicken – steeped in chicken broth and black pepper – cut into small cubs and chilled until firm.
  • Sliced or Slivered Almonds toasted in a dry pan
  • Green or Red Seedless Grapes quartered or raisins
  • Monterey Jack Cheese shredded
  • Celery sliced
  • Crisp Iceberg or Romaine Lettuce

Dressing:

  • Mayonnaise
  • Honey
  • Curry Powder I use the "chicken curry spice" from Market Spice in Pike's Market (Seattle, WA), but most others will be OK
  • Salt to taste
  • Milk or Buttermilk to thin if necessary

Instructions
 

  • Mix dressing ingredients together and store in a glass jar in the fridge. (can hole for several weeks)
  • You may either mix this together with the dressing and put a mound of it on a nice leaf of the lettuce, or toss it with the lettuce for a salad, or use the chicken mix as a sandwich filling on a croissant and add a lettuce leaf to that.
