Massaman Chicken Curry

Ingredients
  

  • Waxy Potatoes cut into 1” cubes – boiled with skins on
  • Onion Chopped
  • Chicken Breasts cut in bite-size pieces
  • Cream
  • Milk
  • Frozen Peas
  • Salt
  • Pepper
  • Curry Powder or Massaman Curry Paste
  • Rice cooked
  • Roasted Peanuts for garnish
  • Plain Yogurt

Instructions
 

  • Fry onion and chicken pieces together until the chicken is cooked through.
  • Add: cream, milk, frozen peas, salt, pepper and curry or massaman curry powder.
  • Cook together till thickened slightly (or thicken with cornstarch).
  • Drain potatoes and gently stir in.
  • Serve over steamed rice with plain yogurt, if desired.
  • Garnish with unsalted, roasted peanuts.
