Roasted Red Pepper and Goat Cheese Alfredo – Katie’s Recipe
Ingredients
- 2 Whole Red Bell Peppers
- 2 Tbsp Olive Oil
- 1 Small Onion Small
- 1 C. Half and Half
- 4 oz. Garlic and Herb Goat Cheese
- 2/3 C. Parmesan Reggiano Grated
- 1/2 C. Artichoke Hearts cut in 1/2” pieces – optional
- 1/2 Lb. Linguine cooked al dente
- Salt and Pepper to taste
Instructions
- Mix everything (other than pasta) together in a large pan and heat through.
- Once hot toss in pasta and mix to coat pasta completely.
