Alaskan Salmon – Auntie Liz’s Recipe

Ingredients
  

  • 1 1/4 lb Salmon
  • 2 Tbsp. Lemon or lime juice
  • 2 Tbsp. Dry White Wine or red wine
  • 2 Tbsp. Soy Sauce
  • 1 1/2 tsp. Sesame Oil
  • 1 Tbsp. Olive Oil
  • 1 Tbsp. Fresh Ginger peeled & minced
  • 1 Tbsp. Garlic minced
  • 1 1/2 Tbsp. Brown Sugar
  • 1/8 tsp. Red Pepper Flakes

Instructions
 

  • Mix all liquid ingredients together to make marinade.
  • Marinate salmon for from 30 minutes to 2 hours.
  • Cover in baking dish in refrigerator.
  • When ready to cook, cover with foil and bake at 400 degrees for 10 minutes for each 1 inch of salmon’s thickness.
  • Serve over Basmati rice cooked with chicken stock.
  • May add sautéed mushrooms, celery, green onions, parsley and/or cilantro – all optional.

Garnishes: 1/4 c. chopped scallions (white parts only) or green onions small amount of dill toasted sesame seeds.
