Green Rice Casserole
Ingredients
- 3 C. Cooked Rice
- 1/2 C. Butter
- 4 Eggs beaten
- 1 lb. Sharp Cheese grated
- 1 C. Milk
- 16 oz. Spinach Frozen and thawed – Chopped
- 1 tbsp. Onion Chopped
- 1 1/2 tsp. Soy Sauce
- 1/2 tsp. Salt
- 1/4 tsp. Thyme
- 1/4 tsp. Rosemary
- 1/4 tsp. Marjoram
Sauce Ingredients:
- Equal parts Butter and Flour for roux
- Milk
- Sharp Cheddar Cheese
- Hot Sauce we like Franks Red Hot Sauce
Instructions
- Cook spinach and drain well.
- Mix all ingredients together and pour into a 9”x13” greased casserole.
- Bake at 350° F. for 1 hour until golden brown and bubbly.
- Serve hot with a cheese sauce.
- To make sauce: make a roux. Cook for 1 minute to cook out the raw flour flavor.
- Slowly add milk to make a smooth thick sauce.
- Once all the milk is incorporated, slowly add cheese.
- When cheese is melted, add hot sauce to taste.
- A family favorite for sure! We like to serve it with a side of sweet coleslaw.
