Rhubarb Crisp

Ingredients
  

Base:

  • 6 C. Rhubarb or other fruit or berries – diced or sliced
  • 2 Tbsp. Flour
  • 1 C. Sugar use less sugar for sweeter fruits or berries
  • 1 zest Orange or 1-2 tsp cinnamon – grated
  • 1/4 tsp. Salt

Topping:

  • 1 1/3 C. Butter
  • 1 1/3 C. Flour
  • 1 1/2 C. Brown Sugar
  • 1 1/2 C. Rolled Oats old-fashioned or quick
  • 1/2 tsp Salt
  • 1/2 C. Chopped Nuts or more – optional

Instructions
 

  • Combine: rhubarb, flour, sugar, orange zest and salt.
  • Spread in a greased 9×13″ pan.
  • Sprinkle with topping mix of: butter, flour, brown sugar, rolled oats, salt, chopped nuts.
  • (this recipe makes way more topping than you will need even if you like lots of topping! It freezes well for use on lots of other things too)
  • Bake at 350°F for about 40 minutes or till golden brown and bubbly in the middle.
