English Shortbread

Georgie's famous true English shortbread

Ingredients
  

  • 8 oz. Butter
  • 4 oz. Powdered Sugar

Cream together, then add:

  • 8 oz. Flour
  • 4 oz. Cornstarch
  • pinch of Salt

Instructions
 

  • Mix everything together.
  • Press into the bottom of a greased and lined 8×8 baking dish.
  • Bake at 350°F. for 20 minutes or until golden brown.
  • Cut while warm.
  • Let cool on the counter.
  • Once cooled, store in airtight container for up to a week on the counter.

This recipe also works well for a shortbread tart crust.

  • Press dough into the bottom of a removable bottom tart-shell. Poke crust with fork several times to keep it from raising while baking.
  • Bake the same as you would for cookies.

Yes, it seems like a lot of cornstarch but that’s part of what makes the cookies so tender.
