Chewy Oatmeal Cookies
Makes 3 dozen cookies
Ingredients
- 2 C. Quick-cooking Rolled Oats
- 1 C. Brown Sugar Packed
- 1/2 C. Vegetable Oil
- 2 Eggs Whites
- 1/4 tsp. Salt
- 1/2 tsp. Almond Extract
- 1/2 C. Raisins or Chopped Dates – optional
- 1/2 C. Walnuts Chopped – optional
Instructions
- Heat oven to 325°F.
- Stir together oats, sugar, add oil.
- Beat egg whites until frothy and add to oat mixture.
- Stir in salt and almond extract.
- Stir in dates and walnuts, drop mixture by teaspoon fuels on lightly oiled baking sheet.
- Bake about 15 minutes.
- Cool, remove from cookie sheet.
