Coconut Macaroons
Ingredients
- 3/4 C. Sugar
- 2 1/2 C. Unsweetened Coconut Shredded
- 2 Egg Whites
- 1 tsp Vanilla Extract
- 1 Pinch Salt
Instructions
- Combine all ingredients in a large bowl, mix well with hands or rubber spatulas.
- Line baking sheet with parchment paper.
- Wet hands (or use an ice cream scoop) and make small piles of the mixture,
- each 1 to 2 Tbsp, about an inch apart.
- Bake at350°F. until lightly brown, about 15 minutes.
- Cool on rack for at least 30 minutes before eating.
- Keeps well in a covered container for up to 3 days.
