Oatmeal Cake

Ingredients
  

Cake:

  • 3 C. Hot Water
  • 2 C. Raw Quick or Old-Fashioned Oatmeal
  • 1 C. Butter
  • 4 large Eggs
  • 2 C. Sugar
  • 2 tsp. Vanilla Extract
  • 1/2 tsp. Salt
  • 2 C. Brown Sugar
  • 2 tsp. Baking Soda
  • 2 2/3 C. Flour
  • 2 tsp. Cinnamon

Topping:

  • 3/4 C. Butter 8 Tbsp.
  • 1 1/2 C. Brown Sugar
  • 1/2 C. Canned Milk or cream
  • 1 C. Flaked Coconut and/or chopped nuts
  • 4 tsp. Vanilla Extract

Instructions
 

  • Pour hot water over the oatmeal and butter. Let stand until butter melts.
  • Then add: eggs, sugar, vanilla, salt, brown sugar, baking soda, flour and cinnamon.
  • Mix all together well.
  • Bake at 350°F. in a greased 9”x13” pan, 35-45 minutes or till toothpick comes out clean.
  • Try not to over-bake the cake.
  • Cover with topping.

To make topping:

  • Heat butter, brown sugar and canned milk or cream together until bubbly and sugar is dissolved. Add coconut and/or nuts and vanilla extract. Spread on hot cake top.
  • Broil for a few minutes until golden and bubbly all over.
  • Cool and enjoy!
