Oatmeal Cake
Ingredients
Cake:
- 3 C. Hot Water
- 2 C. Raw Quick or Old-Fashioned Oatmeal
- 1 C. Butter
- 4 large Eggs
- 2 C. Sugar
- 2 tsp. Vanilla Extract
- 1/2 tsp. Salt
- 2 C. Brown Sugar
- 2 tsp. Baking Soda
- 2 2/3 C. Flour
- 2 tsp. Cinnamon
Topping:
- 3/4 C. Butter 8 Tbsp.
- 1 1/2 C. Brown Sugar
- 1/2 C. Canned Milk or cream
- 1 C. Flaked Coconut and/or chopped nuts
- 4 tsp. Vanilla Extract
Instructions
- Pour hot water over the oatmeal and butter. Let stand until butter melts.
- Then add: eggs, sugar, vanilla, salt, brown sugar, baking soda, flour and cinnamon.
- Mix all together well.
- Bake at 350°F. in a greased 9”x13” pan, 35-45 minutes or till toothpick comes out clean.
- Try not to over-bake the cake.
- Cover with topping.
To make topping:
- Heat butter, brown sugar and canned milk or cream together until bubbly and sugar is dissolved. Add coconut and/or nuts and vanilla extract. Spread on hot cake top.
- Broil for a few minutes until golden and bubbly all over.
- Cool and enjoy!
