Breakfast Wraps

Ingredients
  

  • Potatoes
  • Seasoning Salt to taste
  • Salt & Pepper to taste
  • Prosage or other Sausage
  • Onion – Finely chopped
  • Peppers any color, chopped in 1/4” pieces
  • Eggs – Scrambled
  • Flour Tortillas
  • Sour Cream
  • Cilantro – Chopped
  • Tomatoes – Chopped
  • Salsa
  • Medium Cheddar or sharp cheddar

Instructions
 

  • Fry small cubes of red or white potatoes till crispy and golden. Season with Seasoning Salt and freshly ground black pepper.
  • Fry Prosage or other sausage, diced.
  • Sauté Peppers till soft; set aside.
  • Scramble eggs and season them with Seasoning Salt.
  • Heat a large flour tortilla (plain, or any flavor tortilla) in a dry skillet till warm and soft.
  • Spread sour cream down the center of the warm tortilla.
  • Top with prosage-onion-pepper mixture.
  • Add scrambled eggs down the center.
  • Top with chopped fresh cilantro, chopped fresh tomatoes, salsa
  • and just a bit of shredded medium cheddar cheese.
  • Fold tortilla around fillings and enjoy!
