Pollo a La Crema

Ingredients
  

  • 4 tablespoons olive oil
  • 2 sweet onion cut in half lengthwise and sliced
  • 1 bell pepper sliced
  • 2 whole rotisserie chickens broken down and cut into ½ in pieces
  • 4 tablespoons chicken base
  • 2 cup water
  • 2 cup heavy cream Mexican cream works best
  • 1 tbsp Chipotle hot sauce (Tabasco) (or blended peppers)
  • 2 tablespoon paprika or more if desired
  • salt and pepper to taste
  • 1 ½ cup sour cream

Instructions
 

  • Heat oil in large sauce pan. Saute onion and bell pepper.
  • Add chicken, heavy cream, chicken base in water, hot sauce and paprika.
  • Bring to a boil and simmer covered on low for 30 min or longer for flavors to meld. Season with salt and pepper.
  • Remove from heat and stir in sour cream. Mixture will be somewhat thin, but should be a creamy texture like the consistency of a white sauce.
  • Serve hot with warmed flour tortillas and Spanish Rice. Top with avocado, sour cream, and fried tortillas strips as desired.
