Vermont Pancakes ~ Inn at Weston

Makes about 20 4” pancakes to serve 5-6 people.

Ingredients
  

  • 1 C. Whole Wheat Flour
  • 1/2 C. Rye Flour
  • 1/2 C. Cornmeal
  • 2 tsp. Baking Soda
  • 1/2 tsp. Salt
  • 2 Eggs
  • 2 C. Milk
  • 2 Tbsp. Sour Cream
  • 2 Tbsp. Butter melted

Instructions
 

  • Mix dry ingredients together in one bowl.
  • In another bowl, mix liquid ingredients together well, then gently fold the two mixes together.
  • Makes about 20 (4”) pancakes to serve 5-6.
  • Serve piping hot with butter and maple syrup.
