Vegetarian Eggs Benedict

There's nothing like breaking into that soft warm egg yolk and watching it cascade over the muffin and veggies.

Ingredients
  

  • 1 English Muffin
  • Tomatos Sliced
  • 2 Eggs Poached or fried
  • Asparagus Braised and well seasoned
  • Hollandaise Sauce
  • Avocado ~ Sliced Optional

Instructions
 

  • Toast English Muffins.
  • Poach Eggs in a shallow pot filled with water. Or fry eggs if desired. (we like to make soft set scrambled eggs if we're in a rush)
  • Cook asparagus in a frying pan or on a BBQ. season with salt and pepper and zesty garlic seasoning mix.
  • Make hollandaise sauce from scratch or from package. (we use the packets that have you add milk and butter)
  • Assemble Eggs Benedict. Lay english muffin on a plate. Top each half with a slice of tomato, some asparagus and an egg. Top with hollandaise sauce.
  • Serve immediately and warm.
