Vegetarian Eggs Benedict
There's nothing like breaking into that soft warm egg yolk and watching it cascade over the muffin and veggies.
Ingredients
- 1 English Muffin
- Tomatos Sliced
- 2 Eggs Poached or fried
- Asparagus Braised and well seasoned
- Hollandaise Sauce
- Avocado ~ Sliced Optional
Instructions
- Toast English Muffins.
- Poach Eggs in a shallow pot filled with water. Or fry eggs if desired. (we like to make soft set scrambled eggs if we're in a rush)
- Cook asparagus in a frying pan or on a BBQ. season with salt and pepper and zesty garlic seasoning mix.
- Make hollandaise sauce from scratch or from package. (we use the packets that have you add milk and butter)
- Assemble Eggs Benedict. Lay english muffin on a plate. Top each half with a slice of tomato, some asparagus and an egg. Top with hollandaise sauce.
- Serve immediately and warm.
