Banana Blueberry Mini Muffins

Servings 48 mini muffins

Ingredients
  

Muffins:

  • 3 Bananas Large and ripe
  • ¾ C. White Sugar
  • 1 Egg
  • 1 C. Blueberries
  • 1 tsp. Baking Soda
  • 1 tsp. Baking Powder
  • ½ tsp. Salt
  • C. Flour
  • 1 Orange Just the zest

Crumble Topping:

  • ¾ C. All-purpose Flour
  • ½ C. White Sugar
  • 4 Tbsp. Butter Melted
  • 1 Orange just the zest
  • 1 pinch salt

Instructions
 

Preheat oven to 375° F.

    Muffins

    • Mash bananas together with the sugar and egg.
    • Add the melted butter, blueberries and orange zest.
    • In a separate bowl: combine flour, baking soda, and baking powder.
    • Fold the dry mix into the wet mix.

    Add mini muffin liners to 2 trays of 24 mini muffin pans.

    • Evenly divide batter into 48 mini muffins.

    Crumble Topping

    • Mix together: Flour, sugar orange zest and salt.
    • Stir in melted butter until you have small clumps.
    • Add topping to muffins.

    Bake at 375° for 15mins or until a toothpick comes out clean.

    • Let stand in tins for 5 minutes the take muffins out and let cool completely on a cooling rack.

    Notes

    Can also make as 12 normal sized muffins.
