Everything Bagel Salad
Ingredients
Dressing:
- 3 Tbsp. Dijon Mustard
- 1 Tbsp. Honey
- 3 Tbsp. Lemon Juice
- 1 C. Olive Oil
Cream Cheese Balls:
- 1 Stick Cream Cheese 8 oz.
- Everything Bagel Seasoning
Salad:
- 1 Clamshell Spring Greens Mix
- 4 Sprigs Fresh Dill
- ½ English Cucumber Pealed, halved and thinly sliced.
- 4 Green Onions Thinly Sliced – Optional
- ½ Red Onion Thinly Sliced – Optional
- Cherry Tomatoes Quartered
- 6-8 Boiled Eggs Halved
- Salt and Pepper
- 3-4 Everything Bagels Day Old
- 3 Tbsp. Butter
Instructions
Dressing:
- In a canning jar, add: Lemon juice, Dijon, Honey and Oil.3 Tbsp. Dijon Mustard, 1 Tbsp. Honey, 3 Tbsp. Lemon Juice, 1 C. Olive Oil
- Shake well to emulsify. Taste and adjust as needed.
Bagel Croutons:
- Roughly rip, or cut, bagels into desired crouton size.3-4 Everything Bagels, 3 Tbsp. Butter
- Place in a preheated skillet with butter to crisp up the outside. You are looking for crispy edges and soft centers.
- Transfer to baking sheet and place in a 200° oven for 20 minutes to help them dry out.
Boiled Eggs:
- Add Eggs to a pot and cover with water.6-8 Boiled Eggs, Salt and Pepper
- Boil for 6-7 minutes, depending on desired yolk doneness.
- Remove from heat, drain and add eggs to a bowl of ice water.
- Peel and cut in half, season each half with salt and pepper.
Cream Cheese Balls:
- Cube cream cheese into small bitesized cubs.1 Stick Cream Cheese, Everything Bagel Seasoning
- Add everything seasoning mix to a shallow bowl.
- Add cubed cream cheese to seasoning mix and roll around to coat.
Salad Assembly:
- To a large salad bowl add: spring greens mix and layer with salad dressing, cucumbers, tomatoes, fresh dill, Green onions, red onions, cream cheese balls, eggs and croutons.1 Clamshell Spring Greens Mix, 4 Sprigs Fresh Dill, ½ English Cucumber, 4 Green Onions, Cherry Tomatoes, ½ Red Onion
- Repeat layers 1-2 more times.
