Mashed Sweet Potatoes or Yams

Ingredients
  

  • 2 lbs. Sweet Potatoes or Yams about 2 large or 3 medium, peeled, quartered length-wise and cut crosswise in 1/4” thick slices
  • 4 Tbsp. Unsalted Butter
  • 2 Tbsp. Heavy Cream
  • 1/2 tsp. Salt
  • 1 tsp. Sugar or 1 1/2 Tbsp Brown Sugar
  • 1 Pinch freshly ground Black Pepper
  • 2 tsp. minced fresh Ginger optional

Instructions
 

  • Combine all ingredients together in a 3-4 quart saucepan or frying pan. Cover and cook over low heat, stirring occasionally, until potatoes fall apart, 35-45 minutes.
  • Remove from heat.
  • Mash the potatoes with a potato masher and serve immediately.
