Fry small cubes of red or white potatoes till crispy and golden. Season with Seasoning Salt and freshly ground black pepper.
Fry Prosage or other sausage, diced.
Sauté Peppers till soft; set aside.
Scramble eggs and season them with Seasoning Salt.
Heat a large flour tortilla (plain, or any flavor tortilla) in a dry skillet till warm and soft.
Spread sour cream down the center of the warm tortilla.
Top with prosage-onion-pepper mixture.
Add scrambled eggs down the center.
Top with chopped fresh cilantro, chopped fresh tomatoes, salsa
and just a bit of shredded medium cheddar cheese.
Fold tortilla around fillings and enjoy!
