Brown Sugar Boba & Tiger Milk Tea
Ingredients
Boba
- 45 grams Brown Sugar
- 60 grams Water
- 90 grams Tapioca Starch or Tapioca Flour or less, add a little at a time until you have smooth dough. you need a lot less if you live somewhere really dry. Try closer to 60 grams
Tiger Milk Tea
- 1 C Brown Sugar
- ½ Gallon Milk
- Whipped Cream
Instructions
Boba
- Combine water and brown sugar.
- Heat until sugar melts.
- Take off the heat and add a spoonful or 2 of tapioca.
- Mix until smooth.
- Return to heat and cook until mixture thickens.
- Take off the heat and add the remaining tapioca.
- Mix until smooth.
- Turn dough out onto counter and kneed until smooth.
- Work with half the dough at a time keeping the remaining dough covered.
- Roll dough into snakes and the cut into small pieces, roll those pieces into little balls. (balls will expand a little while cooking so make them a little smaller than you want your final to be.)
Cooking Boba
- Add Boba balls to a big pot of boiling water.
- Boil for 20 minutes.
- Turn the heat off and cover for a remaining 20 minutes.
- This is really good in Tiger milk tea.
Tiger Milk Tea
- Melt brown sugar in a pan, once melted add the hot boba.
- Pour into the bottom of your cup. Add Ice and cold milk.
- Top with slightly whipped heavy cream.
Notes
You can double the recipe but bubbles wont save long after they’ve been cooked.
Drink with a bubble tea straw.
