Cheddar Cheese Grits

Ingredients
  

  • 2 ½ C. Water
  • 1 ¼ C. Milk
  • 1 C. Quick Grits not instant
  • 1 tsp. Salt
  • ¼ tsp. Pepper
  • 1 C. Extra Sharp Cheese shredded

Instructions
 

  • Bring water to a boil in a heavy saucepan.
  • Add milk and re-heat. Slowly stir in the quick grits; add the slat and pepper.
  • Stir everything except the cheese together in a heavy pan; bring to a slow boil, stirring constantly until thickened and bubbly, about 5 minutes.
  • Reduce heat and cook, covered, another 5 minutes.
  • Remove from heat and stir in the cheese.
  • Serve hot with hot sauce to add as desired.

Notes

May make without the cheese, or may also add 1 beaten egg, turn into a buttered casserole dish and bake 25-30 min. till browned and bubbly.
