Cheesy Vegetable Chowder
Ingredients
Base Soup
- 1/2 C. Onion – Chopped
- 1 Clove Garlic – minced
- 1 C. Celery – chopped
- 3/4 C. Carrots – diced (optional)
- 1 C. Potatoes – cubed
- 3 1/2 C. Chicken Broth
- 1/2 Can RoTel Tomatoes with Green Chilies about 1/4-1/2 c.
- 1 C. Zucchini – chopped
- 1 Can Whole Kernel Corn or 1 C. Frozen Corn
- 1 Can Green Beans
- Peas optional
White Sauce
- 1/4 C. Butter
- 1/4 C. Flour
- 2 C. Milk
- 1 Tbsp. Prepared Mustard
- 2 C. Cheddar Cheese – grated
- dash Paprika
- 2 Tbsp. Pimento optional
Instructions
- Combine and bring to a boil: onion, garlic, celery, carrots, potatoes, chicken broth, tomatoes and zucchini.
- Cover, reduce heat and simmer 20 minutes.
- Add remaining ingredients.
- In a separate pan, make a white sauce.
- Stir sauce into soup and heat thoroughly.
