Coconut Macaroons

Ingredients
  

  • 3/4 C. Sugar
  • 2 1/2 C. Unsweetened Coconut Shredded
  • 2 Egg Whites
  • 1 tsp Vanilla Extract
  • 1 Pinch Salt

Instructions
 

  • Combine all ingredients in a large bowl, mix well with hands or rubber spatulas.
  • Line baking sheet with parchment paper.
  • Wet hands (or use an ice cream scoop) and make small piles of the mixture,
  • each 1 to 2 Tbsp, about an inch apart.
  • Bake at350°F. until lightly brown, about 15 minutes.
  • Cool on rack for at least 30 minutes before eating.
  • Keeps well in a covered container for up to 3 days.
