Coffee Cake

Ingredients
  

Topping:

  • 1 C. Pecans
  • 1/8-1/4 C. Melted Butter
  • 1/4 C. White Sugar
  • 1/3 C. Brown Sugar
  • 1 Tsp. Cinnamon
  • 1-2 Tsp. Flour
  • Chop nuts. Combine above ingredients and set aside

Cake:

  • 2 C. Flour Sifted
  • 1 tsp. Baking Powder
  • 1 tsp. Baking Soda
  • 1/2 tsp. Salt
  • 2 large Eggs
  • 1/2 C. Margarine
  • 1 C. Sugar
  • 1 Tsp. Vanilla
  • 1 C. Sour Cream

Instructions
 

  • Grease spring form pan.
  • Sift flour, baking powder, soda and salt together.
  • Put eggs, shortening, sugar and vanilla into a blender and process at mix until smooth.
  • Push Blend button and gradually add half sour cream and half flour.
  • Process until smooth.
  • Repeat with remaining sour cream and flour.
  • Pour half the batter into prepared pan, top with half the topping mixture spread as evenly as possible.
  • Repeat with remaining batter and topping.
  • Bake 350°F 45-55 minutes or until done.
  • Cool 10 minutes before removing from pan.
  • Serve warm with butter.
