Cornmeal Mush

Ingredients
  

  • 4 C. Water additional water may be needed
  • 2 tsp. Salt
  • 1 1/2 C. Yellow Cornmeal

Instructions
 

  • Bring 4 C. of water to a boil; add the salt.
  • Measure the 1 1/2 C. of cornmeal into a larger measuring container and stir while adding cold water to make 2 cups of cornmeal-water slurry.
  • Pour this slurry gradually into the boiling, salted water, stirring well until this mix is smooth.
  • Reduce heat to simmer and cook, stirring, till thickened.
  • Cover and turn heat off; let set for about 5 minutes.
