Dark Rich Gingerbread Cake

Servings 1 8×8 Pan

Ingredients
  

  • 1 C. Dark Molasses
  • 1 Egg well beaten
  • 1 Stick Sweet Butter Melted
  • 2 tsp Ground Ginger
  • 1 C Water
  • 1 tsp Baking Soda Mix into the water
  • 2 C. Four
  • 1 tsp Instant Coffee Crystals
  • 4 Tbsp Dark Semisweet Chocolate chopped finely
  • ¼ tsp Ground Cloves
  • 1 pinch of Salt

Instructions
 

  • Preheat oven to 350 degrees prepare a 8×8 pan with butter and flour to prevent sticking.
  • Mix all dry ingredients together in a mixing bowl and stir to blend.
  • Mix together all liquid ingredients, including the melted butter together and pour all at once into the dry mixture.
  • Pour batter into prepared baking pan.
  • Bake at 350 degrees for 30-35 minutes or until the gingerbread is gently firm to the touch.
  • Cool about 10 minutes in the pan before turning out into a cooling rack or plate.

Notes

Serve Slightly warm, topped with Whipped Cream or Ice Cream.
For high altitude baking try added a few extra Tbsp of flour.
