Eggs A La Marie

We were given this recipe while on a road trip through Colorado. We got in super late to our B&B and the lady who ran it mixed this up for us for dinner since nothing else was open. She made a bad evening into a fun memory. Thank you Marie for sharing your love of hosting with us.

Ingredients
  

  • 8 English Muffins
  • 8-9 Eggs
  • 1/2 tsp. Salt
  • 1/4 tsp. Black Pepper
  • 2-3 Tbsp. Grated Parmesan Cheese plus extra for garnish
  • Splash of Cream
  • Garlic Alfredo Sauce – Make or reheat and keep warm
  • 5 Tbsp. Butter
  • 3 Scallions Chopped
  • Asparagus Spears
  • Olive Oil
  • Salt
  • Pepper
  • Zesty Garlic

Instructions
 

  • Toast english muffins and turn on bbq or broiler.
  • Whisk; eggs, salt, pepper, and cheese
  • Melt 4 Tbsp. of the butter in a large frying pan. Gently scramble eggs when still loose add cream. When mostly done add 3 Tbsp of scallions.
  • Meanwhile brush asparagus with oil and season, grill or broil until tender.
  • Place 2 english muffin halves in each plate.
  • Top with asparagus, and eggs. Drizzle with Alfredo sauce.
  • Sprinkle with extra cheese and scallions.
  • Serve Hot!
