Green Rice Casserole

Servings 8 people

Ingredients
  

  • 3 C. Cooked Rice
  • 1/2 C. Butter
  • 4 Eggs beaten
  • 1 lb. Sharp Cheese grated
  • 1 C. Milk
  • 16 oz. Spinach Frozen and thawed – Chopped
  • 1 tbsp. Onion Chopped
  • 1 1/2 tsp. Soy Sauce
  • 1/2 tsp. Salt
  • 1/4 tsp. Thyme
  • 1/4 tsp. Rosemary
  • 1/4 tsp. Marjoram

Sauce Ingredients:

  • Equal parts Butter and Flour for roux
  • Milk
  • Sharp Cheddar Cheese
  • Hot Sauce we like Franks Red Hot Sauce

Instructions
 

  • Cook spinach and drain well.
  • Mix all ingredients together and pour into a 9”x13” greased casserole.
  • Bake at 350° F. for 1 hour until golden brown and bubbly.
  • Serve hot with a cheese sauce.
  • To make sauce: make a roux. Cook for 1 minute to cook out the raw flour flavor.
  • Slowly add milk to make a smooth thick sauce.
  • Once all the milk is incorporated, slowly add cheese.
  • When cheese is melted, add hot sauce to taste.
  • A family favorite for sure! We like to serve it with a side of sweet coleslaw.
