Green Tomato Mincemeat – Edna Ocheltree
Ingredients
- 3 Qts. prepared Green Tomatoes no need to peel
- 3 Qts. prepared Apples no need to peel
- 1 C. ground Suet optional
- 1 lb. Seedless Raisins
- 2 Tbsp. Orange Rind grated
- 2 Tbsp. Lemon Rind grated
- 5 C. Light Brown Sugar packed
- 3/4 C. Vinegar
- 1/2 C. fresh Lemon Juice
- 1/2 C. Water
- 1 Tbsp. Cinnamon
- 1/4 tsp. Ground Cloves
- 1/4 tsp. Allspice
- 2 tsp. Salt
Instructions
- Coarsely grind tomatoes and apples. Grind suet, if using.
- Combine all ingredients in large kettle.
- Bring to a boil, stirring frequently.
- Reduce heat and stir till thick and dark, about 2 1/2 hours. (An asbestos pad will prevent scorching)
- Pour boiling mixture in hot pint jars, leaving 1/2” of headspace, and apply hot seals and rings.
- Process in boiling water bath for 25 minutes.
