Green Tomato Mincemeat – Edna Ocheltree

Ingredients
  

  • 3 Qts. prepared Green Tomatoes no need to peel
  • 3 Qts. prepared Apples no need to peel
  • 1 C. ground Suet optional
  • 1 lb. Seedless Raisins
  • 2 Tbsp. Orange Rind grated
  • 2 Tbsp. Lemon Rind grated
  • 5 C. Light Brown Sugar packed
  • 3/4 C. Vinegar
  • 1/2 C. fresh Lemon Juice
  • 1/2 C. Water
  • 1 Tbsp. Cinnamon
  • 1/4 tsp. Ground Cloves
  • 1/4 tsp. Allspice
  • 2 tsp. Salt

Instructions
 

  • Coarsely grind tomatoes and apples. Grind suet, if using.
  • Combine all ingredients in large kettle.
  • Bring to a boil, stirring frequently.
  • Reduce heat and stir till thick and dark, about 2 1/2 hours. (An asbestos pad will prevent scorching)
  • Pour boiling mixture in hot pint jars, leaving 1/2” of headspace, and apply hot seals and rings.
  • Process in boiling water bath for 25 minutes.
