Hostess White Fruitcake
Makes 1 angel food cake pan.
Ingredients
- 1 C.+ 2 Tbsp. Sugar Divided
- 1 C.+ 2 Tbsp. Butter
- 6 Egg Yolks + Whites Divided
- 2 1/4 C.+ 3 Tbsp. Flour
- 1/2 tsp. Baking Powder
- 1/4 tsp. Salt
- 1 1/4 lb. Mixed Glazed Fruit
- 1 C. Walnuts Chopped
- 1 C. Golden Raisins
Instructions
- Beat together 1 C. sugar, 1 C. plus 2 Tbsp. butter, 6 egg yolks util creamy.
- Add: 2 1/4 c. plus 3 Tbsp. flour, 1/2 tsp. baking powder, 1/4 tsp. salt to above creamed mixture and mix well.
- In another bowl, beat the egg whites till stiff, then beat in 2 Tbsp sugar.
- Fold this into the creamed mixture.
- Then fold in: mixed glazed fruit, chopped walnuts, golden raisins.
- Grease an angel food cake pan and line the bottom with parchment paper, spreading the batter evenly in the pan.
- Bake for 45 minutes at 350°F, then lower oven temperature to 300° and bake another 45 minutes.
- Test with a toothpick for doneness.
