Lentil Stew
Delicious lentil stew – Adapted from "An Apple A Day" Cookbook
Ingredients
Sautee Before Adding:
- 2 Onions diced
- 4 Celery Stalks chopped
- 3 Large Carrots chopped
- ½ C. Minced Parsley
- 6 Cloves Garlic Minced
- 3-4 Tbsp Oil
Add to Crockpot:
- 10 C. Water
- 4 Tbsp Better than Bouillon (Vegetable or Chicken)
- 2 C. Dried Lentils
- 2 tsp Salt
- ¼ tsp Thyme
- ¼ tsp Oregano
Add about 2 Hours Before Serving:
- 2 Cans Tomato Soup Campbells
Instructions
- Sautee group 1 of ingredients until onions are clear. Add to Ingredients in group 2 in the crock pot on hi.
- About an hour or two later, reduce crockpot to low and simmer.
- About 2 hours before serving, add cans of tomato soup and replace lost water. Adjust seasoning to taste.
- Simmer until ready to serve. Serve with cornbread, or rice, or pasta.
