Macaroni Salad – Grammy Edna’s
Ingredients
- Elbow Macaroni cooked al dente
- Mayonnaise good quality
- Sweet Pickle Relish well drained – save liquid in case it’s needed for moisture
- Onion Finely Diced
- Lemon Pepper generous amount
- Salt moderate amount
- Boiled Eggs chopped
Instructions
- Mix everything together until well incorporated.
- Let sit in the refrigerator for 1-2 hours to let the flavors mix together.
- Will hold in the refrigerator for a few days in a air tight container.
Notes
Can also make as potato salad by replacing the noodles with chopped, cooked Yukon gold potatoes.
