Massaman Chicken Curry
Ingredients
- Waxy Potatoes cut into 1” cubes – boiled with skins on
- Onion Chopped
- Chicken Breasts cut in bite-size pieces
- Cream
- Milk
- Frozen Peas
- Salt
- Pepper
- Curry Powder or Massaman Curry Paste
- Rice cooked
- Roasted Peanuts for garnish
- Plain Yogurt
Instructions
- Fry onion and chicken pieces together until the chicken is cooked through.
- Add: cream, milk, frozen peas, salt, pepper and curry or massaman curry powder.
- Cook together till thickened slightly (or thicken with cornstarch).
- Drain potatoes and gently stir in.
- Serve over steamed rice with plain yogurt, if desired.
- Garnish with unsalted, roasted peanuts.
