Mini Cauliflower Crust Pizza Bites – Low Carb Lifestyle
This recipe was shared to us by a friend and health coach. It really scratches the itch for pizza, while providing a good balance of veggies, protein, and low carb goals.
Ingredients
- 2 ½ C Riced Cauliflower 8.8 oz
- 2 Eggs
- 1 C Reduced-Fat Shredded Mozzarella 5 oz
- 2 Tbsp Parmesan Cheese
- ½ tsp Italian Seasoning
- ⅛ tsp Salt
- ¼ C Marinara Sauce (no sugar added) 2.5 oz
- 20 pieces Turkey Pepperoni Slices 1.6 oz
Instructions
- Preheat Oven to 400 °F
- No need to pre-cook cauliflower. Blend it until it's fine if needed. prepackaged frozen riced cauliflower is usually fairly rough cut.2 ½ C Riced Cauliflower
- To the cauliflower, add Eggs, 1/4 of the mozzarella (1.25 oz), parmesan cheese, Italian seasoning, and salt.2 Eggs, 1 C Reduced-Fat Shredded Mozzarella, 2 Tbsp Parmesan Cheese, ½ tsp Italian Seasoning, ⅛ tsp Salt
- Divide mixture evenly into x12 spaces in regular sized muffin tin, or x30 spaces in a mini muffin tin. Press down with a spoon to create "cups."
- Par-bake just these crusts for 20 minutes.
- Mix together the remaining Mozzarella cheese (3.75 oz) and the Marinara sauce. This allows more even distribution to all the pizza bites.¼ C Marinara Sauce (no sugar added), 1 C Reduced-Fat Shredded Mozzarella
- Divide the pepperoni evenly amongst the muffins.20 pieces Turkey Pepperoni Slices
- Bake for 5 to 7 minutes or until the cheese is melted to your satisfaction.
