Zucchini Bread ~ Edna Ocheltree
"Zucchini bread, who knew?!" Thank you Grammy for sharing this recipe.
Ingredients
- 3 Eggs
- 2 C. Sugar
- 1 C. Oil
- 3 C. Flour
- 2 C. grated Zucchini
- 4 tsp. Cinnamon
- 1 Tbsp. Vanilla extract
- 1/2 tsp. Salt
- 1/2 tsp. Baking Soda
- 1/2 tsp. Baking Powder
- 1/2 C. chopped Nuts
Instructions
- Mix all ingredients together until well mixed.
- Bake at 325° in 2 greased, parchment-lined loaf pans for 1 hour and 10 minutes or till a toothpick inserted in the center of the loaves comes out clean.
- (line pans so you can lift the loaves out of their pans with the extra parchment on the sides)
