Pasta Primavera
Ingredients
- Broccoli
- Cauliflower
- Red Peppers
- Zucchini
- Red Onion
- Mushrooms
- Carrots
- Frozen Peas
- 1/2 C. Butter
- 1 C. Heavy Cream
- 1/4 C. Parmesan Cheese Freshly Grated
- 1/2 C. Romano Cheese Freshly Grated
- Pasta or zoodles
Instructions
- Sauté, then set aside, a selection of chopped vegetables: Broccoli, Cauliflower, Red Peppers, Zucchini, Red Onion, Mushrooms, Carrots.
- Gently cook frozen peas until barely tender. Set aside.
- Cook tricolored Rotini pasta or zoodles with plenty of salt till al dente.
- Crumble some good Gorgonzola cheese; set aside.
Make an Alfredo Sauce:
- -Melt butter, add cream and stir constantly while simmering to reduce; slowly add cheeses, stirring constantly to blend in smoothly.
Assemble: Into hot bowls, layer:
- Hot Pasta
- Vegetables
- Peas
- Alfredo Sauce
- Crumbled Gorgonzola
- Craisins
- Toasted Nuts – optional
