Pasta Primavera

Ingredients
  

  • Broccoli
  • Cauliflower
  • Red Peppers
  • Zucchini
  • Red Onion
  • Mushrooms
  • Carrots
  • Frozen Peas
  • 1/2 C. Butter
  • 1 C. Heavy Cream
  • 1/4 C. Parmesan Cheese Freshly Grated
  • 1/2 C. Romano Cheese Freshly Grated
  • Pasta or zoodles

Instructions
 

  • Sauté, then set aside, a selection of chopped vegetables: Broccoli, Cauliflower, Red Peppers, Zucchini, Red Onion, Mushrooms, Carrots.
  • Gently cook frozen peas until barely tender. Set aside.
  • Cook tricolored Rotini pasta or zoodles with plenty of salt till al dente.
  • Crumble some good Gorgonzola cheese; set aside.

Make an Alfredo Sauce:

  • -Melt butter, add cream and stir constantly while simmering to reduce; slowly add cheeses, stirring constantly to blend in smoothly.

Assemble: Into hot bowls, layer:

  • Hot Pasta
  • Vegetables
  • Peas
  • Alfredo Sauce
  • Crumbled Gorgonzola
  • Craisins
  • Toasted Nuts – optional
