Peanut Butter Cookies – Kerstin’s Favorite

Makes about 2 dozen (2 1/2”) of the best peanut butter cookies you’ll ever have.

Ingredients
  

  • 1/4 C. Shortening
  • 1/4 C. Butter or Margarine
  • 1/2 C. Peanut Butter
  • 1/2 C. Sugar
  • 1/2 C. Brown Sugar
  • 1 large Egg
  • 1/2 tsp. Vanilla Extract
  • 1 1/4 C. Flour
  • 1/2 tsp. Baking Powder
  • 3/4 tsp. Baking Soda
  • 1/4 tsp. Salt

Instructions
 

  • Mix shortening, butter or margarine, peanut butter, sugars, egg and vanilla thoroughly.
  • Measure flour by dipping method or by sifting.
  • Blend all dry ingredients; stir into shortening mixture.
  • Chill dough.
  • Roll dough into 1 1/4” balls.
  • Place 3” apart on lightly greased baking sheet.
  • Flatten crisscross-style with fork dipped in flour (or water then sugar.)
  • Bake at 375°F for 10-12 minutes
