Peanut Butter Cookies – Kerstin’s Favorite
Makes about 2 dozen (2 1/2”) of the best peanut butter cookies you’ll ever have.
Ingredients
- 1/4 C. Shortening
- 1/4 C. Butter or Margarine
- 1/2 C. Peanut Butter
- 1/2 C. Sugar
- 1/2 C. Brown Sugar
- 1 large Egg
- 1/2 tsp. Vanilla Extract
- 1 1/4 C. Flour
- 1/2 tsp. Baking Powder
- 3/4 tsp. Baking Soda
- 1/4 tsp. Salt
Instructions
- Mix shortening, butter or margarine, peanut butter, sugars, egg and vanilla thoroughly.
- Measure flour by dipping method or by sifting.
- Blend all dry ingredients; stir into shortening mixture.
- Chill dough.
- Roll dough into 1 1/4” balls.
- Place 3” apart on lightly greased baking sheet.
- Flatten crisscross-style with fork dipped in flour (or water then sugar.)
- Bake at 375°F for 10-12 minutes
