Rachel’s Tuscan Bean Soup
Ingredients
Sauté the fallowing in olive oil about 2 Tbsp. olive oil
- 1 onion chopped
- 5 stalks celery chopped
- 1 clove garlic chopped
Then add:
- 1 carton chicken broth
- 2 cans tomatoes can add tomato juice or tomato sauce I use tomato juice
- 2 cans white beans / northern beans
- salt to taste
- pepper to taste
- basil to taste
- marjoram to taste
- thyme to taste
Instructions
- can add red pepper Before serving.
- add chopped basil and sprinkle parmesan cheese on top of each bowl.
- Serve with hardy bread or rolls.
