Rachel’s Tuscan Bean Soup

Ingredients
  

Sauté the fallowing in olive oil about 2 Tbsp. olive oil

  • 1 onion chopped
  • 5 stalks celery chopped
  • 1 clove garlic chopped

Then add:

  • 1 carton chicken broth
  • 2 cans tomatoes can add tomato juice or tomato sauce I use tomato juice
  • 2 cans white beans / northern beans
  • salt to taste
  • pepper to taste
  • basil to taste
  • marjoram to taste
  • thyme to taste

Instructions
 

  • can add red pepper Before serving.
  • add chopped basil and sprinkle parmesan cheese on top of each bowl.
  • Serve with hardy bread or rolls.
