Smokey Oven Baked Bbq Chicken
Ingredients
- 2 Tbsp. Butter
- 3 Cloves Garlic minced
- 1 C. Ketchup
- 2 Tbsp. Brown Sugar
- 1 Tbsp. Worcestershire Sauce
- 1 Tbsp. Liquid Smoke
- 1 tsp. Salt
- 1/4 tsp. pepper
- 1/4 C. Water
- 3 Small Onions sliced
- 2 1/2 lb. Chicken Thighs We use boneless, skinless – browning these first will reduce some of the liquid (a good thing)
Instructions
- Cook garlic in butter until lightly browned.
- Add ketchup, brown sugar, Worcestershire, liquid smoke, salt and pepper and water; heat to boiling.
- Reduce heat to low, cover and simmer 10 minutes, stirring occasionally.
- Arrange chicken pieces (if using with skins, arrange skin-side up) in an open roasting pan.
- Put onion slices over the chicken.
- Pour sauce over chicken and onions.
- Bake 1 hour 15 minutes at 375° F.
- Serve over steamed rice.
