Tomato Bisque – Grammy Ocheltree
Ingredients
- 4 C. Stewed Tomatoes
- 2 tsp. Salt
- 1 Tbsp. Sugar
- 2 Tbsp. Onion chopped
- 2 Tbsp. Parsley chopped
- 2 Slices Lemon
- 1 Bay Leaf
- 1 C. Hot Water
- 3 Tbsp. flour
- 3 Tbsp. butter
- 1 3/4 C. Evaporated Milk
Instructions
- Cook together, tomatoes, salt, sugar, onion, parsley, lemons and bay leafs for 15 minutes.
- Remove bay leaf and lemon.
- Blend with stick blender for 5 seconds, you want it to still be somewhat chunky.
- Add water.
- Make a paste of flour and butter.
- Add to tomato mixture and cook 5 minutes.
- Just before serving, add evaporated milk.
