Tomato Soup – Safeway clone courtesy of Kerstin
Ingredients
- 2 Tbsp. Butter
- ¼ C. Onion finely chopped
- 1 tsp. Garlic minced
- 2 28 oz cans Stewed Marzano Tomatoes
- 1 Tbsp. Dried Basil crushed
- 28 oz. Water
- Vegetable Broth Concentrate – to taste I used “Better Than Bouillon” brand
- Salt to taste
- Pepper to taste
- Sugar to taste
- Heavy Cream to taste
Instructions
- Saute onion in butter until onions are clear.
- Add tomatoes, basil, water and vegetable broth concentrate and simmer until tomatoes are very soft; puree.
- Adjust seasonings to taste.
- May also add: chopped fresh or dried parsley, salt and pepper and pinch of sugar.
- When almost ready, add heavy cream to desired creaminess.
