Vermont Pancakes ~ Inn at Weston
Makes about 20 4” pancakes to serve 5-6 people.
Ingredients
- 1 C. Whole Wheat Flour
- 1/2 C. Rye Flour
- 1/2 C. Cornmeal
- 2 tsp. Baking Soda
- 1/2 tsp. Salt
- 2 Eggs
- 2 C. Milk
- 2 Tbsp. Sour Cream
- 2 Tbsp. Butter melted
Instructions
- Mix dry ingredients together in one bowl.
- In another bowl, mix liquid ingredients together well, then gently fold the two mixes together.
- Makes about 20 (4”) pancakes to serve 5-6.
- Serve piping hot with butter and maple syrup.
