Wacky Cake – Vegan

Ingredients
  

  • 1 C.+ 3 Tbsp. Sugar
  • 1 1/2 C. Flour
  • 1/2 tsp. Salt
  • 1/4 C. Cocoa Powder the better the chocolate, the better the cake
  • 1 tsp. Baking Soda
  • 1 tbsp. Vinegar
  • 1 tsp. Vanilla Extract
  • 1/3 C. Oil
  • 1 C. Cold Water

Optional Broiled Coconut Icing ingredients:

  • 4 Tbsp. Butter (or butter substitute, such as Earth Balance)
  • 1/2 C. Brown Sugar
  • 1 C. Shredded Coconut and/or chopped nuts
  • 2 Tbsp. Milk or non-dairy substitute, like Almond Milk

Instructions
 

  • Sift: sugar, flour, salt, cocoa powder and baking soda. into an ungreased 8×8″ pan.
  • Stir around in pan until well mixed.
  • Then add: vinegar, vanilla, oil and cold water.
  • Stir mix around in the pan until no lumps remain, making sure to get into the corners of the pan.
  • Bake at 350°F for 30-35 minutes, or until a toothpick comes out of the center dry.
  • ~May add chocolate or carob chips, nuts, etc. as desired. Can be eaten and enjoyed just plain or topped with cherry pie filling and whipped cream (or whipped cream substitute).
  • Combine butter (or substitute) sugar and milk (or substitute) in a saucepan; bring to a boil.
  • Remove from heat and add the coconut and/or chopped nuts.
  • Spread on hot wacky cake and broil until the topping is beginning to brown.
