Tortilla Soup – Kerstin’s amazing soup
Ingredients
- 1 Onion chopped
- 1 Bell Pepper chopped
- 1 Med. Zucchini chopped
- 8 C. Chicken Broth
- 1 C. Corn Frozen
- 1 15 oz. can Fire-roasted Tomatoes
- 1 15 oz. can Pinto Beans optional
- 1 Jalapeño Fresh – Chopped finely
- 2 Tbsp. Taco Seasoning
- 1 t. Ground Cumin
Instructions
- Saute together: onions, bell peppers, zucchini.
- Add: chicken broth, corn, tomatoes, beans, jalapeño, taco seasoning and cumin.
- Adjust seasonings to taste.
- Serve with shredded cheese, sour cream, cilantro, and crisp fried corn tortilla chips, limes and sliced avocados.
- I enjoy this soup well blended, and toped with sour cream, avocado and fresh fried tortilla strips.
