Saute together: onions, bell peppers, zucchini.
Add: chicken broth, corn, tomatoes, beans, jalapeño, taco seasoning and cumin.
Adjust seasonings to taste.
Serve with shredded cheese, sour cream, cilantro, and crisp fried corn tortilla chips, limes and sliced avocados.
I enjoy this soup well blended, and toped with sour cream, avocado and fresh fried tortilla strips.
