Potato Corn Soup

Ingredients
  

  • 1 Onion chopped and sautéed in butter
  • 5 lbs. Potatoes peeled but in large pieces
  • 2 tsp. Salt
  • 1/4 tsp. Pepper
  • 2 12 oz cans Evaporated Milk or Regular Milk and Cream
  • 1/4 lb. Sharp Cheddar Cheese Grated
  • 1/2 C. Sour Cream
  • McKay’c Chicken Seasoning or Spike Seasoning to taste
  • 1 C. Corn optional

Instructions
 

  • In a large stockpot combine: onion, potatoes, salt and pepper.
  • Add Enough water to cover potatoes.
  • Boil until potatoes are very soft.
  • Just before serving, to keep the dairy from curdling-Mash potatoes to small pieces and add: milk, cheese, sour cream, chicken seasoning and corn.
  • We like to serve the soup with chopped green onions (or chives), cheddar cheese, sour cream and bacco bits.
