Potato Corn Soup
Ingredients
- 1 Onion chopped and sautéed in butter
- 5 lbs. Potatoes peeled but in large pieces
- 2 tsp. Salt
- 1/4 tsp. Pepper
- 2 12 oz cans Evaporated Milk or Regular Milk and Cream
- 1/4 lb. Sharp Cheddar Cheese Grated
- 1/2 C. Sour Cream
- McKay’c Chicken Seasoning or Spike Seasoning to taste
- 1 C. Corn optional
Instructions
- In a large stockpot combine: onion, potatoes, salt and pepper.
- Add Enough water to cover potatoes.
- Boil until potatoes are very soft.
- Just before serving, to keep the dairy from curdling-Mash potatoes to small pieces and add: milk, cheese, sour cream, chicken seasoning and corn.
- We like to serve the soup with chopped green onions (or chives), cheddar cheese, sour cream and bacco bits.
