In a large stockpot combine: onion, potatoes, salt and pepper.
Add Enough water to cover potatoes.
Boil until potatoes are very soft.
Just before serving, to keep the dairy from curdling-Mash potatoes to small pieces and add: milk, cheese, sour cream, chicken seasoning and corn.
We like to serve the soup with chopped green onions (or chives), cheddar cheese, sour cream and bacco bits.
